Portugal’s food tells the story of its history, its regions and its long relationship with the sea, and it has become one of the country’s strongest attractions for visitors. This 5-day course explores Portugal’s rich culinary and cultural traditions and how they connect with tourism and cultural identity. It is designed for professionals and educators in tourism, hospitality and gastronomy who want to expand their knowledge and practical skills.
You will discover the diversity of Portuguese gastronomic heritage, with a special focus on traditional cuisine, olive oil, local products and regional dishes, from the many ways of preparing bacalhau and fresh seafood to traditional pastries. You will explore the food culture behind these products and how it shapes local identity. Through practical activities and real examples, you will see how Portuguese culinary traditions can be used to raise cultural awareness, design authentic and sustainable tourism experiences and bring new ideas into tourism and gastronomy-related work. Throughout the course, you will also compare Portuguese food culture with that of your own country and exchange experiences with participants from other countries.
By the end of the course, you will have a deeper understanding of Portugal’s gastronomic heritage and practical ideas to apply in your teaching, training or professional projects.
