Food connects us with our land, our history and our communities, but the way we produce, cook and consume it also has a strong impact on the planet. Sustainable gastronomy is becoming essential in hospitality and tourism, and future professionals need to know how to balance tradition, creativity and environmental responsibility in their daily work. This course is designed for VET teachers, trainers and staff in hospitality, culinary arts and tourism, and explores how culinary heritage, ecological practices and new food trends can work together. It covers seasonal and local products, short supply chains, reducing food waste, using the whole product, sustainable sourcing and plant-based cooking. It also shows how traditional food practices can be preserved and valued while adopting more sustainable methods, and how sustainable gastronomy creates authentic experiences for visitors, strengthens local identity and supports local economies. By the end of the course, you will understand the key principles of sustainable gastronomy and be able to apply sustainable practices in training kitchens, adapt traditional recipes, design sustainable menus and gastronomic tourism experiences, and bring sustainability and culinary heritage into your VET teaching to prepare your students for a more responsible and innovative food sector.
